This time I bring you a dish that for me is a delight, a simple and delicious dish of beef tenderloin with red wine sauce and mashed potatoes as a garnish. It is a recipe for the celebration of some special event.

Ingredients:

Medallions

500 grams of beef fillet
1 glass of red wine
2 Tablespoons of honey
1 teaspoon of butter
1 red onion, diced
Thyme sticks
Salt and pepper to taste.

Puree

500 grams of potatoes
200 grams of pecorino cheese
1 tablespoon of cream
salt and pepper to taste
1 sprig of coriander or parsley

Preparations:


Cut the loin into medallions, season with salt and pepper. Brown them in the frying pan with a few drops of olive oil, seal the medallions and cook for 8 minutes. In another pot, make a reduction between the wine with the chopped onion and thyme. We make a kind of infusion that is reduced. Then we put the honey, season it and pass it through a sieve. We put the sauce back in a pot and add the teaspoon of cold butter, to thicken the sauce.

For the mash, we boil the potatoes with a little salt. Crush them and add the cream, pecorino cheese and pepper.
