Qurator's: Hive Top Chef!//Vegetable Soup//Step by Step

¡Hello friends of HIVE!


Welcome to my blog, this time @qurator proposes a challenge for this great Top Chef l contest on Wednesdays which consists of a Soup.


Today I present you the traditional vegetable soup that cannot be missing from our diet and our cooking repertoire. Easy to make, healthy and delicious.


This vegetable soup is very low in calories, rich in fiber, water and energy. Ideal for low-fat and low-cholesterol diets. It also provides vitamins, especially vitamins A and C, and minerals such as potassium, magnesium, calcium and copper.


If we have children it is a good way to take advantage of them eating vegetables in their daily diet.



Ingredients


  • 2 ripe tomatoes
  • ½ onion
  • 1 garlic clove
  • 1 carrot
  • 1 zucchini
  • 1 cups cabbage strips
  • 1 potato
  • 1 cup of broccoli
  • Salt and pepper to taste
  • 2 tablespoons of oil
  • 6 cups of water
  • Cilantro to serve
  • Lemon to serve



Instructions:


  • Peel and cut the vegetables into squares of the same size.

  • Blend the tomato, onion and garlic with 1 cup of water until smooth.


  • Then in a pot heat the oil and add the blender mixture, cook over medium heat for two minutes, until it changes to a darker color.

  • Add the remaining water, carrot, potato and broccoli. Season to taste with salt and pepper. Cook over high heat. When it boils, lower the heat, cover the pot and cook for 15 minutes.


  • Then add the zucchini and cabbage, cover the pot and cook 10 more minutes or until the vegetables are al dente.




  • Serve to taste with lemon juice and a little coriander.

You can substitute one vegetable for another if you don't like it.


Enjoy this excellent vegetable soup. Very healthy and excellent to take advantage of the vegetables and include them more in your diet.
