Huusk knife keeping it too sharp for it’s own good.

A bit over a year ago I did a review on the Huusk chefs knife that I got off the internet. Since then it has been my goto knife in the kitchen and used for just about everything from preparing veggies to cutting ribs. About the only thing I don’t use it for is cutting bread that needs a specialist tool or just buying sliced bread.

The Huusk still holds an edge really well and only needs to get sharpened about once every 3 months usually with just the edge needing honed with 1000, 1500 and finally 2500 diamond grit, yes I have managed to nick my fingers now and again it is really sharp.

I use a manual knife sharpener that lets you change different grit sticks. There are less fine grits in the set are great if you have a really blunt knife or one that you need to change the profile but I don’t need to use them on the Hussk. I Dount use one of the electric pull through gizmos which can wreck a blades edge.

I have made a couple of 3D printed modifications to the sharpener over time, the first was a way of fitting a better suction cup to the rear to stop it sliding about which it did when I first got it.

The other mod is a set of Neodymium Magnets that lock the knife solidly in position with out needing to hold the handle.

Also a couple of 3D printed wedges to make quick adjustment for different knives.

Lastly after a lot of trial and error getting the curve right I printed of a blade cover so the Huusk can go in the draw with damaging the edge.

It is admirable all the dedication you put into the conservation and improvement of such an important tool as a kitchen knife.

I learned a long time ago the importance of buying as much as possible high quality knives for the kitchen and keep them properly sharpened to achieve optimal results.

The Huusk is a great knife the the blade is a really good shape and good quality steel.
