Organizing A New Freezer and Ruebens for Dinner - by Sunscape

When corn beef goes on sale every March for St. Patrick's Day, I purchase a few to enjoy throughout the year. After slow cooking the tip in the Ninja pot, it looked like this:

It was so tender and oh my, it smelled amazing. I had homemade sauerkraut in the fridge and all the necessary ingredients to make Reuben sandwiches for dinner.

I am not a fan of Rye bread, so I used Italian instead, now don't pick on me, lol.

The Reubens paired nicely with a tossed salad with cheese curds from the yogurt I had made recently. Even though not your traditional corn beef meal, we enjoyed it very much.

Earlier in the day, we emptied the small chest freezer to transfer everything into the new upright.

It is incredible how much one of those chest freezers can hold.

By the time I was finished organizing everything into categories, my fingers were frozen, and I had a pair of gloves on besides.

It was a quick job putting it all in the new freezer. The following day I went to the Dollar Store to find some small bins to organize it even further.

Most of the items are vacuum sealed into the portions I would use with a recipe. Then I put them all into larger zip lock bags which helps with stacking. Now that it is set up, it is so much easier for me to find what I'm looking for without having to move items like I did with the chest freezer.

At least now I can see what I actually have on hand. I found a lot of hot peppers from last year's harvest that need to be used. I think I will purchase some Mango's and make Carribean Hot Sauce with them. I should do it soon before I am outside working on the gardens now that Spring is upon us.

I probably could! Everyone tells me if anything ever happens they know where to come for food. I think it is because we were so poor growing up and now I tend to overcompensate. Plus I grow way more than I need, but love to share with my neighbors. BTW that is my second freezer, the other is just for prepared meals and all the meat.

Organizing a freezer is quite a job. I will have to do mine soon I think... But I'll leave the inventory until June.

I also need to do the large upright with all the meat in it. I'm going to wait for a warm day though and we can defrost it at the same time. The weather has been beautiful the past two days, but the temps are going to plummet again. Ugh!
