It is a dissimilar metal primary battery. Copper is one pole, and zink is the other electrode. The paper forms the insulator. The magnetic field simply holds this battery stack together, like a clamp!

I could do the same with two plates and some paper?

The magnets only hold the stack of cells together, and tie the first cell to the second electrically. The demo has half a Dozen cells in series to make the 3 volt battery.

Likely each cell puts up about 0.5 volts. It is not rechargeable, since it is a primary battery. When the metal is consed, the battery dies.
