Fig marmalade

This year, due to the strong heat, most of the trees in the farm seem to get their fruit riped a few weeks later.

There are three varieties of fig trees in the farm and one of the biggest ones is also the one which gets its figs ripe sooner so today I decided to grab some and make marmalade .

I picked about 1kg of figs, cleaned them and cutted them.

Added the juice of one lemon and 400 grams of sugar instead of 500 as the figs are already quite sweet.

Mixed everything together and had it resting for 20 minutes. Then had is slowly boiling for 50 minites stiring constantly.

While boiling, I had the visit of a friend qnd was tempted to add it to the recipe 🙂 but decided to let him follow his way.

After boiling I filled sime glass pots and left them upside down for cooling and this os the final resault!t

Can't wait to test it tomorrow for breakfast!

My mom makes fig marmalade as well, when she made the first version a few years ago, we made it with lemon, the same as you here.
Then we made with orange, or mixed, orange and lemon with figs. This year, she made one batch with pineapple (piña enlatada) and it was also very delicious.

Will have to try those options next time 😋
