What I am making today will be Khanom Jeen from the central region, which is Khanom Jeen Namya Kati and I have modified it by adding chicken legs and Bua Loi balls, which means fish balls but they look like Bua Loi balls. Let's see the ingredients. 2 kilograms of Khanom Jeen, 3 mackerels, lemongrass, dried chilies, dried chilies, shallots, garlic, lemongrass, and galangal. This is our curry paste. Boil both types of dried chilies, onions, garlic, lemongrass, and galangal. When it's done, boil it well and put everything in a blender. Blend until smooth and set aside. Take the 3 mackerels and set aside the filling. Then fry the mackerels. We fry them because we will get a different kind of aroma, which is different from boiling them. When it's done, remove the mackerel meat and pound it until smooth. 6 Until the meat is bouncy and fluffy, it's done. Let's set aside. Take the chicken legs from the market, cut the nails, boil until the chicken legs are tender, then set aside. Then boil the bua loy meatballs in hot water, then set aside. Let's see how to do it. Put a pot on the stove, put in about 250 grams of coconut milk, add about 100 grams of water. When the coconut milk boils, add our curry paste, mix the coconut milk and curry paste together until the coconut milk separates and the curry paste smells nice. Add 800 ML of water, then another 400 ML. Season with salt, fish sauce, coconut sugar, wait until the water boils, then add the boiled chicken legs, followed by the bua loy meatballs, followed by shredded kaffir lime leaves and galangal. For our coconut milk curry, it will have a spicy taste, salty according to the sweet taste, which will be a little salty. When we add it to the rice noodles, the taste will be just right. This is done for our chicken leg coconut milk curry. The side dishes are fresh vegetables as follows: bean sprouts, shredded long beans, sliced cucumbers. Today I have 3 vegetables.
