Here is a winter mushroom I ate for the first time this year, after it has recently been discovered to be edible.
The Lactarius Atlanticus grows in groups, under oak trees, it has a beautiful red color and doesnt really have a taste of its own, it kind of soaks the taste of what you're cooking it with.
The mushroom's flesh stays hard and chewy in cooking and does not turn into a mush like most mushrooms.
