Now if you leave that pickle covered with a cotton cloth on the bench top for 5-7 days (OUT of the fridge) it will be probiotic too! Important to keep the vegetables pushed down and submerged under the liquid to ensure a clean ferment.

It is a style Khmer recipe for eating fresh. Some people do it immediately but for me, I like waiting for one hour or tomorrow mores then yum. Thanks for your comment.
