Big jar of healthy, immune-boosting, spicy kimchi, freshly fermented and ready to eat. So now what? There's nothing better than yummy, fresh & warm kimchi pancakes for a lockdown-isolation-morning brunch! Or anytime, really. Healthy, probiotic, very moreish and made in just a few minutes. #foodasmedicine for a stronger immune system.
The ingredients are simple:
1 large egg
1 tbsn of kimchi brine
1 tbsn of soy sauce
3/4 cup of plain flour
1/4 cup of water
1 ½ cups of freshly fermented kimchi
Few fresh scallions
Oil
Vinegar (or over-fermented kombucha)
Beat the egg, the kimchi brine and the soy sauce together.
Add the flour.
Beat well till no lumps.
Make sure the kimchi is chopped into smallish pieces.
Add the kimchi and chopped scallions to your flour-egg mixture.
Mix well.
Drop a large spoonfull of mixture into a hot pan, lightly greased with oil. Cook until golden on both sides.
Serve warm with a dipping sauce made with equal parts soy sauce and vinegar. NB. We used over-brewed kombucha and it lent a superb flavor, as well as extra goodness.
Quantities in this recipe made 8 medium pancakes and a lovely brunch for two. My verdict? Drop dead easy - beginner-level cooking.

hmmmmm - avocado on the side - now THAT's a nice idea!! Liberally sprinkled with fresh cracked black pepper. Yum.

I'm doing OK during this time of withdrawal - appreciating the "corona clarity" and enjoying some solitude. Yes, the cabbage=carrot ferment will work, as will just plain sauerkraut. Enjoy!! 😉

So many ways to adapt and adjust this recipe to suit your tastes. We also sometimes do it with mashed banana, walnut & raisin. Equally yummy. Enjoy. x
