πŸ‘¨β€πŸ³ Palak Tempeh πŸ₯₯ Ital Indian-esian Cooking In The Caribbean 🌴

in Natural Medicine β€’ 3 years ago (edited)

A mix of Indian and Indonesian flavors, this dish is perfect for Suriname, a country with Indian and Javanese diasporas.

πŸ‘¨β€πŸ³ Indian-esian Fusion

Β  Β  Β I created this dish in honor of Suriname, our home of nearly 2 years, where a mix of cultures have had a big influence on the country's cuisine. Thanks to the Javanese influence in Suriname, tempeh is a common ingredient available at most markets.

1.JPG

Β  Β  Β Palak paneer is well-known north Indian dish commonly seen on the menu of just about any Indian restaurant outside south Asia. Spinach isn't readily available in Suriname, but amaranth leavs are a much more common ingredient, and do a good job to take the place of spinach in most recipes, although a little more bitter.

Β  Β  Β So, with some creativity, I reimagined this classic Indian dish with Ital ingredients, and used tempeh instead of paneer, putting a little Indonesian influence in this dish, making it perfect for Suriname. Did I mention I had a little help plucking amaranth leaves?

πŸ… Palak Tempeh Ingredients 🌿

3.JPG

⋆ amaranth leaves (about 4 cups packed)
⋆ 4x medium-sized tomatoes
⋆ ginger - (about 2 tsp)
⋆ 1x block of tempeh (cut into long thin pieces)
⋆ cumin seeds - 1 tsp
⋆ hing - β…› tsp
⋆ coriander powder - 1 tsp
⋆ paprika - Β½ tsp
⋆ turmeric powder - Β½ tsp
⋆ sea salt - Β½ to ΒΎ tsp
⋆ shredded coconut meat - Β½ cup (leftover from coconut milk squeezing)

πŸ‘¨β€πŸ³ Preparation Method πŸ”₯

tempeh.JPG

STEP 1

Β  Β  Β Shallow-fry the tempeh slices until golden brown, cut into thirds, and reserve.

4.JPG

STEP 2

Β  Β  Β Grind the tomatoes and ginger, reserve. Grind the amaranth leaves and reserve. Arrange all the ingredients for quick and easy use, as this will help to prevent burning the spices when working quickly with high heat.

6.JPG

STEP 3

Β  Β  Β Heat a few tablespoons of cooking oil, then fry the cumin seeds and hing until the seeds begin to pop.

7.JPG

STEP 4

Β  Β  Β Quickly add the tomato-ginger paste before the cumin seeds turn black. The cumin seeds can burn easily, so it's important to act quickly.

8.JPG

STEP 5

Β  Β  Β Continue sauteing the tomato paste until the oil seperates from the sauce, then add the coriander powder, salt, turmeric powder, and paprika.

8.JPG

STEP 6

Β  Β  Β Cook the tomato paste until it is reduced by half, then add the amaranth puree. Bring back to a simmer and cook for another three minutes to reduce the bitterness a bit.

STEP 7

Β  Β  Β Add any extra water to create the desired consistencyand bring back to a simmer. Lastly, add the coconut meat and tempeh, bring back to a simmer, and serve.

Β  Β  Β My family loves to eat this dish with a lot of raw red onions or shallots, and it gives this meal a nice crunch and some snappy flavor.

Β  Β  Β This is one of the few green dishes that our girls (@KidSisters) absolutely love. Some don't appreciate the color and appearance of this dish, and I guess I can sympathize with that a little, but don't let looks fool you when it comes to a delicious meal.

Β  Β  Β Share your palak tempeh with loved ones to increase the upful vibes. Livity is a thing that money can't buy, so teach the youths how to eat right from an early age.

The green looks great to me. This sounds so good, I love how you have found ways to cook the foods you love without some of the main ingredients. For me cooking is all about compromising and being creative. Thanks for sharing this great recipe xxx

Green is good, and I'm glad our kiddos happily devour this dish. When leafy greens cook down, several salads fit in the palm of your hand, so we try to eat some concentrated greens twice a week.

Thanks for stopping by @trucklife-family. !ENGAGE 30

Chef @justinparke thank you for sharing this amazing recipe that I will attempt to make with spinach. Unlike you guys we have access to plenty of spinach and I don't even know what Amaranth looks like. I am happy that you found the time to do a food post.

I also love seeing the little ones enjoying your food!

Too kind chef, too kind. Spinach is a more palatable substitute for those that don't like a little bitterness. I enjoy making this dish from mustard greens too, but our girls don't care for that style as much, as mustard greens are a bit spicy and bitter, not super kid-friendly. I hope to make more time for food posts in 2021. !ENGAGE 30

Not all people have a garden where they can grow all the food they eat. So some people have to buy their food.
Soon enough we live in a world in which we have to be vaccinated to enter stores.
What do you think about that?

Β 3 years agoΒ Β

We are stranded in Suriname for over 2 years with very few options for emigration elsewhere. There is a lot I would accept just to get out of here, but I definitely don't like it. We nearly had to get yellow fever vaccines to get out of Ecuador, but a paramedic was able to write us some letters so we could catch our plane.

So what do you do when you have to be vaccinated to enter stores?

πŸ‘ŒπŸ‘Œ looks like a real fusion. Should try the tempeh side of fusion. Nicely put up together πŸ‘

Thanks @pradeepdee6. The whole nation of India should embrace tempeh, it would be a culinary game changer. !ENGAGE 10
