Well...both of the @KidSisters only want to be chefs when they grow up. I don't know it that's good, perhaps it shows they haven't seen much else in life other than massive amounts of awesome meals.
We do have another okra dish which I stir fry the okra in a bit oil before adding to a besan-based curry. The result is similar to your oven technique, and a bit of carbon is nice to give it that roasted fiery flavor.
