Butterfly Pea is a herb that my mom grows in the house’s garden. When I was young I didn't know it is many health benefits. But I knew that Thai people use it for drawing on the babies' eyebrows because they believe it will help the hair grow fast and bushy but I don't know.it's true or not? Many Thai people's houses grow because it is easy to grow, has flowers for the whole year and the flowers are beautiful also.
Butterfly Pea flowers' Nutrition
Pharmacological research shows that Butterfly Pea flowers have many medicinal properties such as improving hair growth, decreasing lesions, caring eyes and brain, helping anti-aging, reducing stress and anxiety, and reducing blood sugar. Presently there are many health products from butterfly pea flowers such as shampoo, tea, cosmetics, and vitamins.
What Kind Of Dishes Can I Cook With Butterfly Pea Flowers?
I have dry butterfly pea flowers that I brought from Thailand. Today I want to share a recipe for Toddy Palm with blue syrup.
Ingredients
1.Toddy Palm, 200 grams
2.Water, 2 cups
3.Sugar, 120 grams
4.Jackfruit, 1 piece
5.Butterfly pea juice, 1 1/2 tablespoons
Directions For Making Toddy Palm With Blue Syrup
1.Heat water at high temperate and add sugar. Stir well until the sugar is dissolved.
2.Add butterfly pea juice and mix together.
3.Wait for the mixture to boil and add cut Toddy Palms.
4.Turn the heat off after the mixture starts to boil again.
5.Add cut Jackfruit and mix together again.
6.Serve on a dish with crushed ice.
I think ice butterfly pea tea is also a good summer drink with this sweet.

I just use the color from the flower. Many Thai desserts use the color from butterfly pea flower.

I had it as a juice. It tasted weird though.
You can add sugar or lemon, the taste might be better.
I always use color of butterfly pea to cook.

17 years here and I've never heard of toddy palm. What is its proper name? Dok anchan growing like CRAZY right now!! We have maybe 100+ flowers every day. Please yell if you need seeds sent. 😆
