I feel you!!! With the high humidity our bread get mould fast... so annoying. (in cooler times I near never have mould) And we often eat fruit and yogurt in the morning in this warmth. I try to share the bread and some slices go to my mother and Silvi - I have too much friends who do not eat grain, strange times :-DDD. And sometimes I freeze some slices for our use when I cannot bake because of headaches.
I never tried your crouton method, but this sounds like something I should try (Hmmmm will this work with Vollkornbrot with seeds?)
