Today I prepared them especially to please my palate, I had days imagining them with cream, almost that it is cream with cream because these chips are very soft and almost melt in the mouth. I invite you to accompany me step by step.
Cuando veo las papitas andinas no me puedo resistir a comprarlas porque son muy deliciosas para acompañar muchas de nuestras comidas, aunque para ser sincera solitas con un poco de mantequilla también son muy deliciosas. Hoy las preparé especialmente para complacer a mi paladar, ya tenía días imaginándomelas al a crema, casi que es crema con crema porque estas papitas quedan muy suaves y casi se derriten en la boca. Los invito a que me acompañen para el paso a paso.
Ingredients:
300 gm of Andean potatoes
1 cup heavy cream
1 cup of Parmesan cheese
Liquid milk (amount needed)
1 cup sweet corn
1 red onion
1 stalk of garlic joint
3 garlic cloves
1 sprig of parsley
Turmeric zest
Salt and pepper to taste
Ingredientes:

🌷 Primero debemos lavar muy bien las papitas ya que se le acumulan mucha tierra en los huequitos que tienen, yo lo hago con un cepillito que tengo para las verduras.

🌷 Picamos finamente el ajo porro, la cebolla en plumitas, el ajo bien chiquito al igual que el perejil.
🌷 First we are going to fry the garlic joint, onion and garlic with a little turmeric so that it releases its flavor and color, I tell you that sometimes I add a lot of turmeric to my meals and it remains almost phosphorescent, but all at home they enjoy the special touch it brings.
🌷 Primero vamos a sofreír el ajo porro, la cebolla y el ajo con un poquito de cúrcuma para que vaya soltando su sabor y color, les cuento que en ocasiones le agrego mucha cúrcuma a las comidas y me queda casi fosforescente, pero igual todos en casa disfrutan del toque especial que aporta.
🌷 When the vegetables are soft, add the potatoes and stir so that all the flavors are integrated.
🌷 Cuando los vegetales estén suaves añadimos las papitas y removemos para que todos los sabores se integren.
🌷Then we add the milk cream and a little milk to soften the cream, we cover the pan so that our potatoes are finished cooking.
🌷 Luego añadimos la crema de leche y un poquito de leche para suavizar la crema, tapamos la sartén para que se terminen de cocinar nuestras papitas.

🌷 Agregamos el maíz dulce y el queso parmesano.
🌷 Finally we add a little parsley.
🌷 Por ultimo le incorporamos un poquito de perejil.
🌷 Yo serví las papitas con pechuga de pollo a la plancha.
