Hello everyone! This is going to be my first post on @FoodiesBeeHive 🐝 and although I should have picked some dish from the wide cuban culinary culture (I'm from Cuba), the truth is that I was super excited to use the oven for the first time ❤️. So I chose a dessert (because I love desserts) that was also healthy (as much as a dessert can be😋). Cooking desserts has always helped me cope with stressful moments in my life, and now I'm in the middle of my PhD application process 👩‍🎓, so I'm super stressed out studying and preparing the project. That's how I ended up searching thousands of carrot cake recipes and adapting to the ingredients I had. It was a lucky break that a friend gave me some disposable molds (which I will reuse until the end of its days) and that's how this adventure began. So let's start with the recipe....👩‍🍳

Este va a ser mi primer post en @FoodiesBeeHive 🐝y aunque debí haber elegido algún plato de la amplia cultura culinaria cubana (soy de Cuba), la verdad es que estaba súper emocionada por usar el horno por primera vez❤️. Así que elegí un postre (porque amo los postres) que a la vez fuera saludable (tanto como un postre puede ser😋). Cocinar postres siempre me ha ayudado a sobrellevar los momentos de estrés de mi vida, y ahora estoy en medio de la aplicación para empezar mi doctorado👩‍🎓, o sea estoy súper estresada estudiando y preparando el proyecto. Así fue como terminé buscando miles de recetas de pastel de zanahoria y adaptándolas a los ingredientes que tenía. Fue un golpe de suerte que una amiga me regalara unos moldes desechables (que voy a reutilizar hasta el fin de sus días) y así empezó esta aventura. Entonces empecemos con la receta…👩‍🍳

Ingredients: Eggs (8), milk (214 ml), unsalted butter (150 g), wheat flour (2 1/2 cups), baking powder (1 teaspoon), ground cinnamon (2 teaspoons), salt (1/2 teaspoon), sugar (1 cup), grated carrot (3 cups).
Ingredientes: Huevos (8), leche (214 ml), mantequilla sin sal (150 g), harina de trigo (2 1/2 tazas), polvo para hornear (1 cucharadita), canela molida (2 cucharaditas), sal (1/2 cucharadita), azúcar (1 taza), zanahoria rallada (3 tazas).

Before starting I like to have everything ready 🤓, so I took 50 g of butter and spread them in three molds, then I put flour (1/2 cup) and distributed it all over the mold, to prevent the dough from sticking. It is also necessary to separate the yolks and whites of the eggs in different containers, because they are beaten separately and then integrated. In a recipient I sifted the flour, baking powder and cinnamon, to prevent lumps from forming.
Antes de comenzar me gusta tenerlo todo listo🤓, así que tomé 50 g de mantequilla y los unté en tres moldes, luego puse harina (1/2 taza) y la distribuí por todo el molde, para evitar que la masa se pegara a los moldes. Además, es necesario separar las yemas y las claras de los huevos en recipientes diferentes, pues se baten por separado y luego se integran. En un recipiente cerní la harina, el polvo para hornear y la canela, para evitar que se formen grumos.

Once all the ingredients were ready, I put the egg yolks in a recipient with the sugar and the butter (100 g) and began to beat at the lowest speed. When this mixture seemed well integrated, I began to add the previously sifted powdered mixture little by little, alternating with the milk, until I obtained a smooth batter.
Ya que todos los ingredientes estaban listos, puse en un recipiente las yemas con el azúcar y la mantequilla (100 g) y comencé a batir a la mínima velocidad. Cuando esta mezcla me pareció bien integrada comencé a añadir la mezcla de los polvos previamente cernida poco a poco, alternando con la leche, hasta obtener una masa homogénea.

The next step is to beat the egg whites until they double in size and have a fluffy texture as shown in picture. Then integrate the two mixtures that have been beaten independently. Here, be careful to mix them with enveloping movements, so that the dough does not lose air. Finally, add the grated carrot 🥕and mix very well.
Lo próximo es batir las claras de los huevos hasta que dupliquen su tamaño y adquieran una textura esponjosa como la que se observa en la imagen. Luego se deben integrar las dos mezclas que se han batido de forma independiente. Aquí se debe tener cuidado de mezclarlas con movimientos envolventes, para que no pierda aire la masa. Batter ready to bake
Add the batter to the molds and take it to the oven for 25 min🕦. The oven must be preheated to 180˚C for 15 minutes♨️. It is VERY important that you check the oven temperature, in my case I didn't do it 😬 and after the time the cakes were not ready, so I had to increase the temperature and wait another 12 min. You will know it is ready by the delicious smell 🤗and because if you insert a stick in the cake it comes out clean.
Se agrega la masa a los moldes y se lleva todo al horno por 25 min 🕦. El horno debe estar precalentado a 180˚C por 15 min♨️. Es MUY importante que te cerciores de la temperatura del horno, en mi caso no lo hice 😬 y al cabo del tiempo no estaban listos los bizcochos, por lo que debí incrementar la temperatura y esperar otros 12 min. Sabrás que está listo por el delicioso olor 🤗y porque si clavas un palito en el bizcocho sale limpio.

You ideally should wait until the mold is completely cool 🆒 to unmold, but it smelled sooo good that we couldn't wait🤤. The cake batter is soft and moist, the carrot tastes great with the cinnamon and I think it was a hit for the first time💪.

If you don't like cinnamon you can substitute it with vanilla or simply not use it, it will taste great either way. You can also add more sugar, but I was trying to make it healthy and the carrot is already sweet anyway.
