Apple compote

It seems that the tradition of my illness at the first months of the year continues as well. For the last three or four years, I have been getting sick during this period, it is becoming ridiculous.

The change in temperature also contributed to all this, there were days with a range from -10 to +10, so when all this is added up, it is not easy for the body to get used to it so quickly.

Then you lose your sense of taste, smell, appetite ...

But I definitely have to eat something, so I chose apple compote.
Golden Delicious, are one of my favorites, not too much sweet nor sour, they can be stored for a long time due to their thicker bark.

While I lived in the countryside, we had our own orchard and during the winter we would tuck apples into straw-lined crates, so they will be protected from low temperatures.

Measure 1 liter of water, a tablespoon of baking soda,15-20 minutes.

Now I mostly buy them at the market or store. And since I know the process of growing apples, as they are usually sprayed and treated with pesticides during the year, before each preparation, I soak them in a solution of water and baking soda. That helps me to neutralize at least some toxins from the peel.

Then rinse them.

I want the peel to be left on, most of the vitamins are actually hidden in the peel of the apple, and its healing effect has long been known to everyone, although it is one of the fruits that contains a lot of carbohydrates, which further helps in situations when you have no appetite.

This cutter is my life savior.

Simply chop the apples into smaller or larger pieces.

Place them in a pot, pour about 1 liter of water, and let them cook for around 20 minutes.

I didn't add any sweetener, but I couldn't resist this cinnamon stick (brought it from Cephalonia).
At the very end of cooking drop it in and let it soak a bit with the apples.

I had no choice but to go back to bed, sipping warm compote and hoping to recover till tonight, a bit at least.
