“Capstone to Budol: Building Memories with Alpha Kapa Kapa ft. Sir Mandal”

Hello hivers! Allow me to introduce myself again, @amishu, and welcome to my blog!🌷

I woke up at 7:00 a.m. because there are many things going to happen this day.🌤️ I start by preparing myself, of course. Doing the daily routine in the morning. I left the house around 8 a.m. to go to Landbank first because my mom asked me to withdraw some cash.💸 When I am done, I immediately go to Colon Alley to wait for my friend Justine because we are going to get our hardcopy paper for the capstone that we printed from our classmate.📄

We walk to our house in Cayam after that.🚶🏻‍♀️When we arrived, we took a rest. We visited our house at Cayam because we were going to make a video presentation for our capstone project, and we planned to take the video in my cousin’s new house.🏠 We started taking videos with the help of my two cousins, Trisha and Trixie. We started from our intro up to our ending. We finished the video after so many takes.🎥(HAHAHAHAHAHHA) We were so tired after taking so many videos.

Instead of taking a rest after that, we decided to immediately go to Memay’s house for our plans, like to finish our research manuscript and spend time with the Alpha Kapa Kapa squad also with our trusted adviser, Sir Mandal.

We already planned everything before that day, especially the foods that we are going to cook, and they suggested that we should follow the recipe of Luis, which is chicken teriyaki, and pair it with the fried rice of Justine, as well as Buko juice, our all-time favorite drink.🍶

They start breaking the coconut for the “lamaw” or buko juice, and they transfer the coconut water and the coconut meat to the container. They put it in the fridge after that.🥥

Luis started to prepare the ingredients for the chicken teriyaki with the help of Justine and Kate. He also cut the chicken into bite-sized pieces.

While they were preparing everything, Sir Mandal volunteered to start deep-frying the chicken. After making the sauce for the chicken teriyaki, Luis started cooking it. Kate and Justine also started to cook the fried rice.🍚

Process:

Prepare the Chicken:
* Rinse the chicken breasts under cold water and pat them dry with paper towels.
* Slice each chicken breast horizontally to create two thinner pieces. This helps them cook more evenly and absorb more flavor.

Make the Teriyaki Sauce:
* In a small saucepan, combine the soy sauce, mirin, sake (or sherry), brown sugar, minced garlic, and minced ginger.
* Heat the sauce over medium heat, stirring occasionally, until the sugar has dissolved and the sauce starts to simmer. Let it simmer for about 5 minutes to allow the flavors to meld together.

Marinate the Chicken:
* Place the chicken breasts in a shallow dish or resealable plastic bag.
* Pour about half of the teriyaki sauce over the chicken, making sure each piece is coated.
* Reserve the remaining sauce for later use as a glaze.

Cook the Chicken:
* Heat the vegetable oil in a large skillet or grill pan over medium-high heat.
* Remove the chicken from the marinade and discard any excess marinade.
* Cook the chicken for about 6-8 minutes per side, or until cooked through and browned on the outside.
* You can also grill the chicken for a smokier flavor.

Make the Glaze:
* While the chicken is cooking, prepare the glaze by adding the cornstarch and water to the reserved teriyaki sauce.
* Whisk until smooth.
* Transfer the mixture to a small saucepan and heat over medium heat, stirring constantly, until the sauce thickens.

Serve:
* Once the chicken is cooked through, brush it with the teriyaki glaze.
* Garnish with sesame seeds and sliced green onions if desired.
* Serve hot with rice and steamed vegetables.

While everyone is busy preparing the food, Marlyn, Patricia, and Edreyan are also busy singing for entertainment purposes, as they said.🎶 (HAAHAHAHHAHAHA) I was also editing our video that we take in the morning to have something to do.

The fried rice is already cooked, so we slowly transfer it to the banana leaves. It will serve us as a big plate, and that’s what we call a budol fight: eating together in a banana leaf and eating using hands.🍃

Chicken Teriyaki✨

The chicken teriyaki is also done; Luis transfers it to an aluminum container. Since there are spring onions that they never use, Kate decided to put them at the top of the chicken teriyaki to make it look more aesthetic.

Then Sir Mandal carefully transferred and equally shared the chicken teriyaki.🍲

After the preparation of food, we decided to add the condensed milk to the buko juice to make it more flavorful and creamy.🥛

Before eating, we took some pictures first. We also set up a phone that will take a time-lapse video of us eating. After everything, of course we should never forget to pray before eating, so Edreyan led the short prayer for everyone.🙏🏻

Next is the best part: eating time!🥢

We eat silently because all of us are already starving. Luis chicken teriyaki didn’t disappoint us; it’s the best, especially with a little kick of spice, a chef's kiss.👩🏻‍🍳💋

Also, the fried rice is very tasty; the hotdog on top adds more flavor to it, and it’s the best combination of the chicken teriyaki.🍛

After those delicious foods, all of our tummies are happy.😋 The food will always be better if you eat together with your friends and do a budol fight.💪🏻

We talked to each other after Patricia and I decided to sing together and the other’s decided to watch a movie.🎤 It’s already 6 p.m. that time, but still, we’re so energized, maybe because we are so full. (HAHAHAHAHAHHA)

At 8 p.m., they finished the movie, so we also stopped singing karaoke.🎬 So, we decided to head home because some of our friends had already gotten a call from their parents. We planned to walk even though it’s already night; the fare is very expensive, and since we are many, it’s not that scary. While we are walking, Sir Mandal thinks of a funny idea: he asks Luis to take a video of him while laying in his motor. I don’t know exactly what he was thinking, but it’s funny. (HAHAHAHAHHHA🤣) When we arrived at the Colon Alley, Sir Mandal said that he was going to give a ride to Patricia and Clark since they are both from Tuyan, so we just waited for Sir Mandal. He arrived, so Hanz and I immediately hopped into the motorcycle because Sir Mandal said that he was going to give us a ride too, since Hanz is from Tabtuy and I am from Minglanilla, as well as Sir Mandal.🏍️

And we all arrived safely at each of our homes.👩🏻
