Baked Bread Desserts

Crunchy on the surface, and smooth on the inside. Creamy, and savory with coconut milk and egg flavor.

I excitedly said that I had an experiment in the kitchen. And, as usual, if you've read this blog, that means my experiment was a success. Also, I'm happy with the results.

Bread. We can have many choices to make, not just for breakfast but also for delicious desserts.

The idea this time came from my stock of bread which only had a few pieces left in my kitchen. And, my husband asked to make something crunchy to enjoy on Saturday night.

As usual, I looked around the kitchen while thinking about what menu inspiration I could make with simple ingredients.

So, in the end, I made baked bread combined with milk and eggs. For milk, I use coconut milk, but you can also replace it with general milk.

For easier serving, I use small ceramic bowls for baking the mixture. You can also use ceramic mugs.




The Ingredients

  • 2 breads
  • 2 eggs
  • 3 tbsp of sugar
  • 1 cup of milk
  • 1/2 tsp of cinnamon powder
  • 1/2 tsp of vanilla powder/essence
  • 1/4 tsp of salt



Cooking Instructions

PREPARING BREAD

Cut a slice of bread into pieces. Then, flatten the bread with a rolling pin or just using a glass.

After flattening, roll the bread, and cut it again into two parts if the mugs/ bowls are short. To avoid too much bread coming out of the mugs / bowls.

Then, arrange the rolled bread into mugs / bowls until it looks like it fills the container. Set aside.



MAKING EGG MIXTURES

Mix the ingredients in the big bowl by adding two eggs, sugar, cinnamon powder, and salt into coconut milk. Mix them well until there are no lumps.



POURING THE EGG MIXTURE

After the egg mixtures have been made, pour them into mugs/bowls that have previously been filled with rolled bread. Make sure not to fill the containers completely because they will expand upwards over the mugs/bowls during the baking process.



BAKING THE MIXTURE

Don't forget to preheat the oven before. Then, bake the mixtures at 180 degrees Celsius for 40-50 minutes.

In this recipe, I use an oven with "top fire and bottom fire" style. Setting this style will make the top of the bread crunchy. If you don't have an oven with a setting like this, just use the normal fire setting. But you just need to monitor it starting from 40 minutes. If the top is still not dry enough, or the mixture is still wet, then it can be baked again.




SERVING WAYS

Serve baked bread while warm. You can add warm milk over the bread to add more sensation to your mouth.

What I like is the crunchy top of the bread while the inside remains soft, a combination of eggs and coconut milk. Similar to bread pudding, only I made the top of this dessert crunchy in texture instead of soft.

We can use many ingredients around US, local things but rich in flavor 😊

I like plant-based milk better in these types of recipes. Almond milk or coconut milk are my favorites. It's a great choice to use coconut milk too!

The consistency of coconut milk texture is perfect for desserts. For almond, I still did not like the smell of almond milk 😊

I wonder if it's ok to just use 3 tbsp of 50/50 sugar and cinnamon mix and not using the cinnamon powder 🤔

No problem if without Cinnamon powder. Just adjust to your taste preference 😊

Here is a dessert I can easily make at home. It looks delicious. Yes, it caught my attention because it has simple ingredients haha.

I thought similar with French toast because the bread Will Soaking on milk. Did you try French toast?

I love the presentation. Roll shape is always pleasing to the eye. At home, we used to make this as snack when we were kids, only not with this beautiful shape. Sweet French toasts; I miss them so much now that I can't eat much wheat bread or cow's milk.
