Here is a special Vegetarian Thai green curry and it is special because the paste is totally homemade. It is aromatic and mildly spicy. You should definitely try this recipe and leave your comments for me.
Making of Green Curry Paste
Ingredients:
½ tsp Black Peppercorn
1 tsp Cumin Seeds
2 tsp Coriander Seeds
1 inch Raw Turmeric
7 Green Chilies
5 cloves Garlic
1 inch Ginger
1 medium Onion
3 Lemongrass
1 bunch Coriander Leaves
5 Kaffir Lime Leaves
1 lemon Lemon Zest
½ lemon Lemon Juice
1 tsp Salt
1 tsp Coconut Sugar
1 tbsp Oil
¼ cup Water
Required Vegetables:
2 medium Green Brinjals
1 medium Yellow Capsicum
1 medium Carrot
1 medium Zucchini
300 g Firm Tofu
Deep frying Oil
Other Ingredients:
2 tbsp Oil
2 cups Water
1 Pandan Leaf
4 Kaffir Lime Leaves
Salt to Taste
1 cup Coconut Milk
