Looks delicious. I don't think I could ever do the vegan thing though. I just like meat way too much. I don't eat it as much as I used to, but I still need it every now and then. What I really wish is that I enjoyed fish more. I would love to eat a ton more fish, but I just don't usually think of it unless it is fried and horrible for you! Plus my wife can't stand fish, so that makes it hard.

I use to love chicken, i ate it all the time. At first it was really hard to give it up but now i really don't desire to eat it at all. I'm with your wife on that one, can't stand it.
I don't hate fish, I just don't go to it as my first choice when we got out to eat. I'd much rather eat a rack of ribs or something like that :) I consume far less red meat than I used to and I think that is a reasonable start for me!
We all have to start somewhere. That's how i did it i just kept cutting back on my meat intake until eventually i didn't feel i needed to eat it anymore.
Maybe one day I will get there! Don't hold your breath though :)
