Caraotas negras con tropezones - Black beans with stumps

Las caraotas negras forman parte de la cultura gastronómica de Venezuela, en cada hogar se comen, algunos por lo deliciosas y otros también por ser rendidoras. Recuerdo que mi madre decía:

  • Hay que hacer caraotas, quien tiene caraotas cocidas en casa siempre tiene comida.

Black beans are part of the gastronomic culture of Venezuela, in every home they are eaten, some because they are delicious and others also because they are profitable. I remember my mother saying:

  • You have to make beans, whoever has beans cooked at home always has food.

Crecí comiéndolas, se pueden combinar con todo, con arepas, empanadas, con arrocito, etcétera. Los tropezones en las caraotas depende de la región, algunos las hacen con paticas de cochino, con cambur verde, con costillas, etcétera.

I grew up eating them, they can be combined with everything, with arepas, empanadas, with rice, etc. The tripe in the beans depends on the region, some make them with pig legs, with green banana, with ribs, and so on.

Te las traje con:

  • 250 gr de chicharrón sequito con poca grasa.
  • 300 gr de ñame.
  • 1 plátano maduro.
  • 6 dientes de ajo.
  • 1 cebolla mediana.
  • 2 cucharadas de aceite.
  • 1 trocito de pimentón
  • 3 ajíes dulces.
  • 1 ramita de cilantro.
  • 1 cucharadita de comino.
  • Sal al gusto.
    Y por supuesto ½ kg de caraotas negras.

I brought them to you with:

  • 250 g of pork rinds with little fat.
  • 300 gr of yams.
  • 1 ripe banana.
  • 6 cloves of garlic.
  • 1 medium onion.
  • 2 tablespoons of oil.
  • 1 piece of paprika
  • 3 sweet peppers.
  • 1 sprig of coriander.
  • 1 teaspoon of cumin.
  • Salt to taste.
    And of course ½ kg of black beans.

Lo primero es escoger y limpiar bien las caraotas, las lavo y las dejo remojar en agua como tres horas. Les boto el agua negra del remojo y las pongo a hervir con abundante agua, generalmente se tardan en ablandar y para ésto uso mi cocinita eléctrica para economizar el gas (alto costo), durante el proceso de ablandar vamos agregando agua, pues se van secando y revisando además si están más suaves los granos, nunca las dejes sin agua.


Mientras, hago un sofrito, coloco el aceite en un sartén, dentro los ajos machacados y la cebolla cortada en cuadritos, les agrego la cucharadita de comino, revuelvo, apago y reservo. Cuando a mis caraotas les falta poco para ablandar por completo les agrego el chicharrón, el ñame cortado en cuadros, el pimentón rallado, los ajíes cortados sin semillas y el sofrito de ajo y cebolla.

The first thing is to choose and clean the beans well, I wash them and let them soak in water for about three hours. I throw away the black water from soaking and put them to boil with plenty of water, they generally take time to soften and for this I use my electric stove to save gas (high cost), during the softening process we add water, as they dry out and also checking if the grains are softer, never leave them without water.


Meanwhile, I make a sauce, I place the oil in a pan, inside the crushed garlic and the diced onion, I add the teaspoon of cumin, stir, turn off and reserve. When my beans have little to soften completely, I add the pork rind, the yam cut into squares, the grated paprika, the seedless cut chili peppers and the garlic and onion sauce.

Dejo hervir hasta que ablanden, agrego el plátano cortado en rueditas, el cilantro (el plátano se cose rápido y no quiero que se deshaga), rectifico siempre los sabores, agrego sal y comino si es necesario, deben con caldo y especito.

I let it boil until they soften, I add the banana cut into small wheels, the coriander (the banana is quick to sew and I don't want it to fall apart), I always correct the flavors, I add salt and cumin if necessary, they should be with broth and specito.

¡Y aquí están mis caraotas con tropezones, quedaron divinas!



Nota: Las caraotas negras se tardan mucho en coserse, dependiendo de la cosecha puede llegar a ser más rápido su ablandado, éstas se tardaron casi cuatro horas. Si quieres degustar ésta receta al almuerzo, debes comenzar bien temprano su elaboración.
Ricas en antioxidantes, proteínas, fibras, vitaminas B1, B2, B3, B6, B9, ácido fólico, hierro, magnesio, calcio, sodio, zinc.

And here are my stumbled beans, they were divine!

Note: Black beans take a long time to sew, depending on the harvest, their softening may be faster, they took almost four hours. If you want to taste this recipe for lunch, you should start its preparation very early.
