It was meant to be another Sungkai Dinner Day Out with friends, but we had to cancel due to unforeseen circumstances. And, because I wasn't planning on going out anyhow, I opted to make my own dinner.
As this meal has mussels and prawns, I've named it Seafood Mix Vegetable. Although the preparation time is longer than the cooking time, this is a really a simple dish.
So, my fellow foodies bee hivers, here it goes...
Recipe: Seafood Mix Veggies
Ingredients
Garlic
Onion
Ginger
Chayote
Carrots
Beans
Capsicum
Bell pepper
Prawn
Mussels
Soy sauce
Salt
Pepper
Butter
Procedure
Wash the vegetables
Cut the vegetables in desired sizes
Peel and chop the garlic, onion and ginger
Saute prawns and mussels in a butter
Set aside
Saute garlic, onion and ginger in a pan with oil
Pour in chopped chayote, carrots and beans.
Put a bit of water then cover for two minutes
Pour in chopped capsicum, bell pepper, mussels and prawns.
Pour some soy sauce and salt to taste
Put the lid on, occasionally mixing
Serve and enjoy while hot and once vegetables are tender
Boiled eggs are also a good addition to this recipe. I still have leftovers, which I'll eat tomorrow with two boiled eggs. That sounds like a pretty good plan. Wooooop!
