Fairly simple today. It does take a while to chop up all the veggies and such, but thats all.
Dinner
Here’s what I used:
100g of Rice
1 Carrot
1 Parsnip
1 fat Beetfoot
250g of Tofu
I fancied a bit of Tofu today, its been a while since I have had it. Its quite expensive in my country for some reason.
Instructions:
Chopped up all of the veggies threw them on a tray with some veggi broth and put them into the ovn for 20mins at 200C, now I would give a bit longer because of the Tofu this time around, some of the veggies was still a bit chewy.
Cook the rice for 10min or so.
Plate it and add back in the liquid from the veggies. Thats some nice stock :D
