My Own Version of Pork Adobo with Boiled Chicken Egg; Filipino Most Well-Known Dish

Hola, Hi fellow hivers around the world, another day, another dish I have prepared. I just wanna share this well-known dish in the Philippines - PORK ADOBO, though you can also have chicken adobo, squash adobo and etc.

Pork adobo can be considered as the pride of Filipino cuisine. It's a dish comprised of pork chunks, soy sauce, vinegar and sugar if you want to add some sweets on it. Adding cooked whole eggs of a quail or chicken is optional. There's nothing can beat this kind of dish specially during occasions like birthdays, fiestas and gatherings. This pork adobo couldn't be forgotten on many occasions. Their are various ways on how to cook pork adobo. My husband requested this dish because he misses the way I cook pork adobo. LOL Maybe it's his way of asking favor cause he's not good in cooking though. haha

Let me share you this recipe of mine.

INGREDIENTS:
4 gloves garlic minced
1 whole red onion
1/2 kilo pork cut into chunks
1/2 cup sugar (you can add more)
2 cups water
1/2 cup soy sauce
1/4 cup vinegar
3 boiled egg (optional)
3 pcs. bay leaves
salt and black pepper

PREPARATION:

Prepare all the ingredient. Wash the pork.

Heat the pan and put the pork until it turns light brown or half cooked and there's an excess oil. Transfer to a plate.

On a pan with excess oil, add the garlic and onion. Than add the pork and combine it with the spices.

Add the soy sauce and the sugar and let it simmer for 5 minutes. Then, pour the water and add the bay leaves. Let it simmer until it boils.

Pour the vinegar but don't mix it, let it simmer for another 5 minutes. When the water drops, add the salt and pepper to taste. I don't add an oyster sauce because it will change its color to darker.

Lastly, add the boiled eggs and combine it so that the egg will be coated by the adobo sauce. I use chicken eggs on that time because there's no quail eggs available. Let it simmer for another 5 minutes.

Now, transfer to a plate and is ready to serve hot.
