¿Habrá alguna fiesta infantil donde falte una rica gelatina? Lo dudo, porque la gelatina es refrescante, sabrosa, versátil, fácil de hacer, económica y rendidora. Por si fuesen poco todos estos atributos la gelatina es pura proteína animal, rica en vitaminas, colágeno y otros nutrientes que la hace un alimento apropiado para niños y adultos.
Esta semana una sobrina-nieta cumplió sus siete añitos y para celebrarlo preparé una gelatina fiestera, una combinación dulce-acido que en casa a todos nos gusta por lo que he mejorando la receta y la presentación. El dulce lo aporta la natilla, el ácido la gelatina y la fruta con la que decoramos. La combinación de sabores y texturas realzan estos dos postres que separados son ricos y juntos son exquisitos. Aquí les presento la receta.
Ingredientes
Para la natilla
1 Litro de agua
16 cucharadas rasas de leche en polvo
8 cucharadas rasas de azúcar
4 cucharadas colmadas de maicena
1 cucharada de vainilla
Para la gelatina
200grs de gelatina en polvo sabor a fresa
1 litro de agua
200 grs de fresas naturales
Procedimiento
1.- En el vaso de la licuadora vierte el agua, la leche en polvo y el azúcar. Licúa hasta que los ingredientes queden mezclados.
2.- Vierte la mitad del contenido en una olla gruesa que no pegue los alimentos, llévala a fuego muy bajo, en la otra mitad de la leche disuelve la maicena e incorpórala a la leche tibia, lleva la temperatura a fuego medio-bajo y remueve constantemente la mezcla hasta que espese, sigue removiendo unos minutos más.
3.- Cuando la natilla este espesa, retira del fuego y agrega la vainilla, remueve hasta que quede completamente mezclada.
4.- Ten a mano el envase dónde vas a hacer la gelatina (un envase con capacidad de 2 litros y medio) humedece el envase para que la natilla no se adhiera completamente a él. Vierte toda la natilla y deja enfriar por espacio de media hora.
5.- Mientras esperamos que enfríe limpiamos y lavamos las fresas, luego las ponemos a remojar en una ensaladera con agua y un chorrito de vinagre por espacio de 10 minutos, pasado el tiempo las cortamos por la mitad de forma trasversal y la reservamos para cuando vayamos a decorar.
6.- Pasada la media hora comenzamos a preparar la gelatina, para lo cual pon a hervir ½ litro de agua y coloca en un envase los 200 gramos de gelatina en polvo.
7.- Cuando el agua este hirviendo, agrégala a la gelatina y remueve hasta que esté completamente disuelta, terminado este proceso agrega las dos tazas restantes de agua fría, remueve unos segundos más y reserva una taza de la gelatina preparada.
8.- Vierte la gelatina sobre la natilla, que flotará al despegarse
9.- Cubre toda la superficie con las fresas que hundirán un poco la natilla, termina de bañarla con la taza de gelatina preparada que dejamos en reserva.
10.- ¡Listo! Ya la sobrina y sus amiguitas dispuestas a cantar el cumpleaños feliz, saborear su cremosa torta de chocolate, la alegre gelatina fiestera y un delicado mousse de parchita.

Ingredients
For the custard
1 liter of water
16 level tablespoons of powdered milk
8 level tablespoons of sugar
4 heaping tablespoons cornstarch
1 tablespoon vanilla
For the gelatin
200 grams of strawberry-flavored gelatin powder
1 liter of water
200 grams of natural strawberries
Procedure
1.- Pour the water, powdered milk and sugar in the blender cup. Blend until the ingredients are blended.
2.- Pour half of the contents in a thick pot that does not stick to the food, bring it to very low heat, dissolve the cornstarch in the other half of the milk and add it to the warm milk, bring the temperature to medium-low heat and stir the mixture constantly until it thickens, continue stirring for a few more minutes.
3.- When the custard is thickened, remove from the heat and add the vanilla, stir until it is completely mixed.
4.- Have the container where you are going to make the gelatin at hand (a container with a capacity of 2 and a half liters), moisten the container so that the custard does not adhere completely to it. Pour all the custard and let it cool for half an hour.
5.- While waiting for it to cool, clean and wash the strawberries, then soak them in a salad bowl with water and a splash of vinegar for 10 minutes. After this time, cut them in half crosswise and reserve them for when you are going to decorate.
6.- After half an hour we begin to prepare the gelatin, for which put ½ liter of water to boil and place 200 grams of powdered gelatin in a container.
7.- When the water is boiling, add it to the gelatin and stir until it is completely dissolved. When this process is finished, add the remaining two cups of cold water, stir for a few seconds more and set aside one cup of the prepared gelatin.
8.- Pour the gelatin over the custard, which will float when it peels off.
9.- Cover the entire surface with the strawberries that will sink the custard a little, finish bathing it with the cup of prepared gelatin that we left in reserve.
10.- Ready! Now the niece and her friends are ready to sing happy birthday and enjoy their creamy chocolate cake, the cheerful party jelly and a delicate parchita mousse.
