The other day I made a soup for lunch which is something my Mum makes from time to time. It was my first time trying to make it and it turned out exactly like how it's suppose to taste.
Its a black beans and pork soup and I used pork shoulder for this. You could use pork belly or ribs of you'd like so anything you like really. If you don't eat pork, you can substitute this with chicken and it'll work fine.
The black beans are washed and in a pot brought to a simmer together with a bulb of garlic. Just cut the tops and add in the whole garlic. Don't mind peeling them.
Next, add in the black beans and pork and bring everything up to a boil. Once the soup starts boiling, add in salt and some chicken stock, lowering the fire and simmering the soup for an hour or so.

You'll end up with tender pork shoulder. The fat extremely rich and the lean meat balances it with its savory and meaty flavor. The black beans and garlic pairs really well giving the soup and earthy flavor profile.
I also made a simple dipping sauce of minced garlic, chopped up birds eye chili, and soy sauce. Dip the pork shoulder slices in this and enjoy with rice is the best way to eat this meal.
I do love this soup dish but normally isn't it using bone Chinese say " Pai gu"..
