Ulog #253: Killer Lasagnas

One of my favorite things to eat has got to be lasagnas. I love eating them. I love making them. I love watching other chefs make them and study what techniques and ingredients they use. The sheer joy of the end product after hours of laboring in prep and constructing a lasagna is just awesome.

Here's my version of a lasagna and has been selling like hot cakes with rave reviews by everyone that has tried it so far.

Everything is made from scratch from the sauces, to the egg pasta sheets. It's a 3 tier lasagna that consist of:

  • Classic Italian Marinara red sauce

  • Hand-rolled egg pasta sheets

  • Spinach Bechamel

  • Oven Roasted Brinjal

  • Mozzarella & Cheddar Cheese

Baked and roasted in an oven for 20 minutes at 230 degrees Celcius and turning it midway through and the end result is a delicious and hearty lasagna.

It takes about 3-4 hours to make this but the effort is well worth the labor. Sometimes the only sad thing at the end is that you made enough for all the orders from customers and didn't have an extra one for yourself.
