My Recipe for OHA Soup: Prepared with three dollars

in Foodies Bee Hive2 months ago

Today, I decided to prepare a delicious and appetizing Igbo delicacy also enjoyed by the Ibibio people of the South South state of Akwa Ibom state.
OFE OHA( Mkpafere soup)
"OHA" is an Igbo name or "Mkpafere' in Ibibio name, while African Rosewood plant is the English name. This plant is medicinal and grows into a huge tree that retains its green leaves throughout the year. There are two types of 'Mkpafere'; mkpa-abasi (African Rosewood plant of God) and mkpa inyang (African Rosewood plant of the river). In my soup today I made use of mkpa abasi and used achi as my thickener. This soup is rich in protein, vitamins and minerals. This meal is very simple and easy to prepare, you can use, Semovita, fufu, Amala or any swallow of your choice.
CHIEF INGREDIENTS/QUANTITY

  1. 1/2kg Dried smoked fish
  2. 1/4kg OHA leaves
  3. 1kg "Chevron" or "goat meat"
  4. 1/2 kg "Canda or "Ikpa"
  5. 2tbsp ground Cray fish
  6. 2tbsp Achi (thickener)
  7. 1/3kg Stock fish
  8. 1/4kg Periwinkle
  9. 3 fingers Fresh pepper
    10.1 Onions
  10. 3 table spoon palm oil
  11. Seasoning (to taste)

PROCEDURE

  1. In a clean water, wash the meat, fish, stock fish, Periwinkle and pormmo probably two to three times.
  2. Rinse your pot, put them, season and simmer in low heat.
  3. When the stock is ready, pour in one cup of water.
  4. I noticed that if I add my thinner into the pot directly, it will coaster and stick to some area of the soup pot.
  5. So in today's soup I decided to add my thinner to the crayfish to help separate it in the pot.
  6. After adding the thinner, stir and add palm oil and slow to stand on fire for 10 minutes without covering.
  7. I decided to cut my OHA leaf with knife, some people cut with their fingers.
  8. Add the leaves as the last thing, allow on heat for 5minute.
