Burning the dough can have many reasons and I don't think flour has a role in it. Most likely the oven is the culprit, or the level of heat you're using.

Thank you. Almost every time when it comes to dough, we like to get reference from the internet and experiment with the heat. So used to using frying pans and cooking, baking is still something to perfect. Love your tutorial. :)
