Made Peppered Bread and Spinach Pies

Today, we made Peppered Bread and Spinach Pies with my mother and sister.

Pepper Bread is a dish made in every house in Hatay and eaten with love.

Ingredients for Pepper Bread

For the dough:
• 350 gr flour (3.5 cups)
• 5 gr fresh yeast
• 1 teaspoon of sugar
• 1 teaspoon salt
• 250 ml of water

Ingredient:
• 1 onion
• 1 tablespoon of thyme,
• Half a kilo of fresh cottage cheese
• 7-8 tablespoons of pepper paste (the degree of pepper is optional. The amount can be increased or decreased if desired with plenty of pepper)
• 1.5 cups of pure olive oil
• Since there is salt in the tomato paste, no salt is added. (If you wish, you can add salt according to your own taste by tasting it.)

Making Bread with Pepper

  1. Finely chop the onions or grind them with a robot.
  2. Add the thyme and crumble it with our hands.
  3. Add the pepper paste into this mixture and mix it again with a spoon.
  4. Next, we add the precipitate into this mixture and make the mixture homogeneous.
  5. Add 1.5 cups of olive oil to this mixture (Less oil can be added if desired. However, it is recommended that the amount of oil should not be less than 1 glass in total so that it is not too dry.)
  6. Finally, we make the mixture homogeneous and make the pepper bread mortar ready.
  7. We dissolve the yeast in water. We add salt and flour and knead the dough well with our hands.
  8. After it reaches a consistency that will not stick to our hands, let's cover it with foil and wait for about half an hour.
  9. Let's make meringues the size of the palm of our dough, put a paper towel or a bread cloth on it so that the meringues do not dry out, and leave it in this way for 10-15 minutes. let's wait more.
  10. After we prepare the dough and put the pepperoni bread on it, we bake it in the oven at 200 degrees for about 10 minutes.
  11. We expect it to absorb a little after it comes out of the oven. Then our pepperoni bread is ready!

Ingredients for Spinach Pies

For the dough:
• 350 gr flour (3.5 cups)
• 5 gr fresh yeast
• 1 teaspoon of sugar
• 1 teaspoon salt
• 250 ml of water

Ingredient:

• 1 medium or large onion
• 2 tablespoons of olive oil or vegetable oil
• 500 grams of spinach
• 1 bowl of cottage cheese
• 1 tablespoon of chili paste (hot or sweet)

Making Bread with Pepper

1.First, the dough is kneaded and left to rest, and in the meantime, the preparation for the stuffing begins.
2.For the stuffing, spinach is chopped after being sorted.
3.After the onion is finely chopped, it is roasted and when it is close to turning the heat off, pepper paste is added and mixed.
4.After the pepper paste melts together with the onions, chopped spinach is placed in it, and after the spinach is roasted a little until the water is gone, it is taken from the stove and left to cool.
5.After cooling, precipitate is added to it.
6.From the fermented dough, balls are separated into pieces slightly larger than walnuts.
7.The hands are dipped in plenty of oil and the dough pieces are rolled out thinly by groping on a hard surface.
8.The prepared inner mortar is added between the rolled dough.The dough is closed in half a moon.

You can do the cooking process in the oven, in the pan, or on the sheet metal. We cooked on the sheet metal.

It was very delicious. You can enjoy it for breakfast or every meal.

"Pepper paste" looks nice, but how to make it? or do you buy it from a tin? Or is there a recipe which you follow and you prepare it yourself?... !LUV

We make pepper paste, tomato paste and all similar sauces and appetizers at home with my family. In general, me, my mother and my sister deal with such things. :D One day I will make a nice post about how to do this.
