Today i would like to share Chole Masala, which is a popular North Indian curry made with chickpeas and a lot of Indian spices. This is a common cuisine, it is made in every house, Everyone's way of making it and everyone's taste is different. Today I would like to tell you how to make Chhola Masala in my style.I remember in my childhood, Chola was considered good recipe and was prepared only on special occasions. But now times have changed,Chhola Bhatura is definitely made in my house once a week,as we all like it very much.Chhola is incomplete without Bhature, Along with Chhola, you can also serve the rice but Chhola Bhatura is a name which is complete in itself.

Ingredients
• 1/2 Cup chickpeas.
• 2 Medium- Sized Onion.
• 4 tbsp of Oil.
• 1 Big - Sized Tomato.
• 4-5 cloves of garlic.
• 2 Inch Ginger.
• 2 Green chilli.
• Pinch of Baking Soda.
• 2 tbsp of Red Chilli Powder.
• 2 tbsp of Chhola masala.
• 2 tbsp Dried mango powder.
• 1 tbsp of Kasturi Methi.
• 1 tbsp of Cumin seeds.
• 2 bay leaf.
• 5-6 Cloves.
• 5-5 Black Pepper.
• 2 Cardoman.
• 1 Inch of Cinnamon.
• 2 Red Chilli(optional).
Process
Soak raw chickpeas overnight in enough water to cover them.
Drain the water in which the chickpeas were soaked. As you can your chickpeas are ready to cook.
Transfer the chickpeas to a pressure cooker, Add pinch baking Soad & Salt. Pressure cook at high heat for 3 to 4 whistles.
The chickpeas should be cooked well and softened enough that you can mash them with a spoon. Keep it aside.
Take a grinder mixer, add the onion, tomato, green chilli, clove, cinnamom, cardamom, black peper, Grind it well make a smooth paste.
Take a kadhai/Pan or cooker itself, heat the oil, add the Bay leaf.
Add the pinch Of Hing for flavour.
Now add Cumin seeds, when it's start crackling.
Add your tomato & onion puree into it, cooked it at medium flame.
Now you can add ginger garlic paste in it, I did not have garlic available so I used ginger garlic paste.
now add chickpea masala to it. In India, masala for everything is available, which makes it easier for people to cook their food in less time with Amazing flavour.
Now add red chilli powder in it and keep stirring the paste, otherwise it will stick to the bottom,This Kashmiri Red Chilli Powder is a special spice of India which gives a good colour to your food.
You keep stirring the gravy and when the oil releases the gravy, it means your gravy is ready.
Now add the Kasturi methi into it at low flame.
Now add boiled chickpeas in it and stir well.
Let it cook on low flame for about 5 minutes so that Gravy gets absorbed into the Chhola.
Now your Chhola(Chickpeas Masala) is ready to serve, serve it with Rice or Bhatura.
Chhola is incomplete without Chole Bhatura(fluffy deep-fried leavened sourdough bread) . If Chhola is made in my house then Bhatura is necessary,I will definitely share the recipe of Bhature in the next blog. So Stay tune to my Blog to know more about indian Recipes
