Bengali Begun Vorta (Mashed Eggplant) Recipe

Hi folks. Hope everyone is doing good. I enjoy reading delicious recipes in this community so I was wondering why shouldn't I write something about a simple recipe which I used to eat a lot when I was in Bangladesh.
Today I am going to share with you a simple and quick but utterly delicious recipe which is made with roasted eggplant/Begun and mustard oil. It is a very nutritious and wholesome meal mainly served with tortilla or rice.
The main ingredient of this delicious recipe is eggplant apart from Mustard oil. Let's take a look at the ingredients..

Ingredients

  • Eggplant/ Begun
  • Onion (1pcs)
  • Green Chillies (1 pcs)
  • Mustard Oil (2 Tablespoon)
  • Salt

Process

  • To begin, score the eggplants with a knife and season with salt and mustard oil.

  • Roast the eggplants for 20 to 25 minutes or until cooked through and soft. To test for doneness, poke it with a knife or fork.

  • Now to the roasted eggplant add chopped onion, green chiles, mustard oil and salt. Mix everything very well with your fingers.

  • Enjoy it with Rice or Tortilla.
