How We Cook Pork Humba

Good food is best shared with good people and good company. Nothing compares to the joy of being able to prepare the foods your family loves.

Today, I will walk you through on how to cook ”pork humba” or a famous Filipino braised pork dish. My partner is the cook and I am just assisting him with all the steps to get the work done a little faster.

Humba is a perfect viand for any regular days or if there are any occasions. It depends on you on when you want to cook it. Us Filipinos, we can cook it on regular days but during any special occasions, ”pork humba” will always be present.

I don't know how other people call this dish but here in Cebu City, Philippines, we call it "Humba".

I always prefer to buy pork at a local wet market rather than in a grocery store, not only it is cheaper but it is fresher.

Here in the Philippines, when we buy meat in the market, the seller will ask us what dish will we be cooking, then if I’m gonna tell them, “I need pork for my humba.”, automatically, they will know which meat part so I need. They will also slice it on pieces perfect for pork humba or braised pork meat.

For the ingredients, we used one whole garlic, onion, laurel leaves, ground pepper, pepper and some star anis. We will also be needing some soy sauce.

We also added some Sprite and some brown sugar.

Here is the meat before we cooked it, we added all the ingredients. When it was boiling, we added the soy sauce, the sprite, and the brown sugar.

We also then added the extra seasonings to add more flavor. We let it sit in the fire for ten to fifteen minutes until the pork meat gets tender.

Here is the finished product.

Pork humba is a Filipino favorite we love its savory taste, it is best paired with rice.
