Food Fun Economics --- Tasty yet inexpensive

Dear Hivians and all the amazing #foodiesbeehive community members.
I woke up very hungry this morning after staying up late working on an article after which i also spent some time listening to an audiobook from the rich dad poor dad collection.

So to the matter at hand which is my hunger and stomach pangs, i am on a very stringent budget at the moment and so with the available resources at my disposal i made this simple but yet tasty meal.

The meal in question i prepared in Nigeria is known by several names some of which include : MTN rice, Palm oil rice, local rice e.t.c and it could be made and tweaked to how you like it based on your financial constraints or how you wanna enjoy it. I consider it one of the most customizable food in Nigeria. Lollzzz.

My available Recipe

  • Rice
  • Palm oil
  • Onions
  • Maggi(seasoning)
  • Fresh pepper
  • Vegetables
  • Crayfish
  • Curry & Thyme

In my case i had raw rice present in the house, onions and maggi, so i went over to a nearby market and purchased crayfish, fresh pepper, plam oil(oil from the palm fruits), scent leaves vegetales, curry and thyme.

For me thats all i could afford as we mize at the moment.

Lets cook it

So i will highlight some of the steps i took in cooking this, simple, inexpensive yet tasty meal.

  • First i had to wash the rice with water properly to take out any impurities.
  • The next step is to boil the rice and wait for it to get soft
  • Once the rice is on fire i start prepping my onions, pepper and crayfish. I slice the onions to my desired shape and size, and i pounded my pepper together with my crayfish

  • Then i washed my vegetable and hand chopped them to be added last into the meal to give it an extra flavour and crunchy texture and freshness.

  • After some few minutes boiling the rice, and been that am using a domestic gas cooker should be soft and i proceed to add my already prepared onions and pepper with crayfish.

  • Keep note of the water level you dont want to get it too much, i add my salt, seasoning, curry and thyme and allow to simmer for 3 mins.

  • After 3 mins this is the stage where you add the palm oil and you cover it and allow it simmer yet again, at this point the rice gains the orange yellowish colour, one of the reasons people call it MTN rice due to its distinct colour.

  • The rice is ready to be scooped out and munched but hey we didnt forget our vegetables, so we sprinkle our hand chopped vegetables and woolah it comes out boom and then you can then take it out and have fun with it.

So i had my tummy gratified and filled and hunger has been settled.
So just incase you wanna try it out depending on your budget you can spice it up with more stuffs like fish, beef, boiled eggs.
