Friends who read me, I salute you all! I'm looking forward to introducing you to a Greek Halva, that's the name of this long-standing sweet that is made in the southern part of Greece. I was born in a nice little town in the southern part. Greece has four seasons, like all of Europe, in November the olive harvest begins and I remember that my mother used to prepare a delicious Halva that is also prepared in some Arab countries and in Turkey, but Greek is divine. I let you know that Greece was under Ottoman (Turkish) rule for almost 400 years and we don't know if they inherited this sweet from us or we from them.
Bueno, mi mamá siempre lo hacía y le quedaba muy rico, mis hermanos lo devoraban. Ella lo hacía con aceite de oliva, como tenemos muchos terrenos con olivos, salía más aromático y le daba forma con una cuchara pero poco a poco lo hicieron más práctico y lo ponen en un molde con hueco.
Well, my mom always made it and it was very tasty, my brothers devoured it. She made it with olive oil, as we have many fields with olive trees, it came out more aromatic and shaped it with a spoon but little by little they made it more practical and put it in a mold with a hole.
Yo a veces lo hago con cuchara pero tiene más trabajo. Recuerdo que mis padres estaban en el campo, yo tenía unos 7 años y mi hermano mayor tenía 12, y como teníamos los ingredientes empezamos a ponerlos en un bol y empezamos a amasar, de pronto la vecina toca la puerta y mi hermano corriendo escondió el bol y casi se le cayeron todos los ingredientes en la chimenea. No le abrimos la puerta a la vecina y ella se fue. Salvamos algo de la masa e hicimos unas bolitas, las comimos pero mi mamá nunca lo supo, sólo se lo contamos cuando éramos ya mayores, nos quedaron fatales jajaja...
Sometimes I do it with a spoon but it takes more work. Ingredientes / Ingredients
- 1 taza de aceite + 1/4 de taza de mantequilla
- 2 tazas de sémola
- 1/2 taza de almendras peladas o maní pelado sin sal (triturados)
- 2 tazas de azúcar
- 8 tazas de agua
- 1-2 palitos de canela
- 8-10 clavos de olor
- Canela en polvo
- 1 cup of oil + 1/4 cup of butter
- 2 cups of semolina
- 1/2 cup peeled almonds or unsalted peanuts (crushed)
- 2 cups of sugar
- 8 cups of water
- 1-2 cinnamon sticks
- 8-10 cloves
- Cinnamon powder
Preparación / Preparation
Primero hacemos el almíbar. En una olla ponemos el agua, el azúcar, los palitos de canela y los clavos de olor. Dejar hervir por 5 minutos, retirar del fuego y sacar la canela y los clavos. Reservar.
First we make the syrup. In a pot we put the water, the sugar, the cinnamon sticks and the cloves. Let it boil for 5 minutes, remove from heat and remove the cinnamon and cloves. Reserve.
En una olla sobre fuego medio poner el aceite y la mantequilla a calentar bien.
In a pot over medium heat put the oil and butter to heat well.
Enseguida echar poco a poco la sémola y la canela en polvo moviendo sin parar con una cuchara de madera hasta que la sémola comience a tomar un color dorado.
Then add the semolina and cinnamon powder little by little, stirring without stopping with a wooden spoon until the semolina begins to turn a golden color.
Rápidamente echamos las almendras o el maní moviendo siempre hasta que el fruto seco se dore un poco.
Quickly add the almonds or peanuts, always stirring until the dried fruit is a little brown.
Ahora de inmediato echar el almíbar poco a poco moviendo con la cuchara, bajar el fuego al mínimo y mover. Tapar unos minutos para que se absorva por completo el almíbar, destapar y remover unos 10 minutos más.
Now immediately add the syrup little by little, stirring with the spoon, lower the heat to a minimum and stir. Cover for a few minutes so that the syrup is completely absorbed, uncover and stir for another 10 minutes.
Retirar del fuego, dejar enfriar un poco y poner la mezcla en un molde con hueco si lo tienen o cualquier otro.
Remove from the heat, let it cool a little and put the mixture in a mold with a hollow if you have one or any other.
Al enfriarse por completo voltear en una bandeja y espolvorear con canela y azúcar.
When completely cooled, turn on a tray and sprinkle with cinnamon and sugar.
Después que se haya enfriado lo meten en la nevera.
After it has cooled, put it in the fridge.
