Chicken tinola is an authentic Filipino dish. A soup that is based on ginger and onion with chicken as the main ingredient, and with the addition of green papaya or (๐˜พ๐™๐™–๐™ฎ๐™ค๐™ฉ๐™š ๐™–๐™จ ๐™–๐™ฃ ๐™–๐™ก๐™ฉ๐™š๐™ง๐™ฃ๐™–๐™ฉ๐™ž๐™ซ๐™š), Chili pepper leaves or Malunggay (๐™ˆ๐™ค๐™ง๐™ž๐™ฃ๐™œ๐™–).Here Malunggay and Chili pepper leaves are quite expensive, it will cost around 2-3 dollars for a small bundle, so I decided to put Kangkong (๐™’๐™–๐™ฉ๐™š๐™ง ๐™Ž๐™ฅ๐™ž๐™ฃ๐™–๐™˜๐™) and Pechay as an alternative.

This traditional dish is usually cooked in low heat for quite some time to bring out the natural flavor of the chicken. And its soo good to served during cold and rainy seasons.

Like I said the main secret in making this dish is by simmering the chicken for a period of time.
As this is cooked with leaves and vegetable, Tinola is having lots of health benefits.

Papaya: Green papaya has anti-inflammatory properties, benefitting patients with osteoarthritis, gout and rheumatoid arthritis. Also has Vitamins and good digestive enzymes. And also removes toxins in our body.

Kangkong: it is a rich source of various vitamins, minerals and antioxidants. It also contains potassium and iron.

Pechay: this is one of my favorite vegetable. Pechay is delicious, full of fiber, vitamins, minerals, antioxidants, and other nutrients that are beneficial to our health.

Prepare it while boiling your chicken, to save more time. In this dish I boiled my Chicken for about 20mins and keep the broth for later use.

Chicken is one of the most protein consumed food and also chicken is one of the best natural way to lessen the cholesterol.

  • Sautรฉ the garlic, onion, and ginger, put ground black pepper so that it will incorporate with the oil to bring more flavor to our dish.
  • Put your boiled chicken and mix it well until skin turned to slightly brown.

  • Now put your green papaya, mixed until well combined and slightly cooked and then pour your Chicken broth and bring it to boil.

  • After 15mins, check the tenderness of your chicken and papaya and then add your leafy vegetables.

  • Lastly, season it with ground black pepper and fish sauce. cook for 2 mins.

Oh wow! I learned one more word that is so similar to Bahasa Indonesia. It's Kangkong and in bahasa indonesia we say it kangkung and it's written like that too. I would love trying this dish if I am in the Philippines ๐Ÿ˜Š
