Balkan cuisine: Stuffed Rolls with Patience Dock - healthy and delicious

The cuisine in the Balkans is a very diverse and interesting mixture of flavors, spices, and smells. A real harmony of tastes, created under the influence of East and West, whose rule changed in this area over time, during the very turbulent history of this peninsula. And it is a real experience to try the dishes of this region. If you ask me, one of the iconic dishes during spring is Stuffed Rolls with Patience Dock. These green rolls are delicious and very healthy, a real spring detox, which we all need after carolic winter food.

But first, let me introduce you to this fantastic plant. I had trouble translating the name of this vegetable. We call it “zelje” and I’ve come across several names in English, so I’ll list all the names: patience dock, monk's rhubarb, garden patience, herb patience.

The Latin name for patience dock is Rumex patientia, and it is a perennial edible plant that is very widespread, especially in areas with a temperate climate. We say that “zelje” is the food of the poor, probably because it is very common in nature, and in the Balkans due to frequent wars, the people have been mostly hungry during a long and difficult history. That is why, I guess, this plant was very used. But patience docks were used in the diet by the Greeks, Romans, and Aztecs.

What are the benefits of using this plant in your diet?

Due to its nutritional values, patience dock is a very healthy and useful vegetable. It is low in calories and does not contain fat. It is rich in vitamins C, A, B. I found that 100 grams of this vegetable provides 80% of the body's daily needs for vitamin C and 20% for magnesium. It is extremely rich in minerals, especially iron, phosphorus, calcium and potassium ... That is why it is a good natural laxative, diuretic and because of its high content of vitamin C, it is good for immunity.

The leaves of this green are used during the spring when the leaves are young. The leaves should be picked before flowering. But you should not overdo the use of this vegetable because it contains acidic potassium oxalate.

Patience dock is very popular in this area. Since I have it in my garden, I often use it during the spring. I put it in soups, pies, pasta... but the most popular are definitely these green rolls...

In short, that's it :) Here is a recipe for Stuffed Rolls with Patience Dock❤️


Ingredients:

  • 500 grams of minced meat. I used beef, but you can mix beef and pork, or just pork, and this dish can be made without meat :)

  • two cups of rice

  • one onion

  • two carrots

  • one clove of garlic

  • spices: salt, pepper, paprika, parsley, basil

Step one: Wash the leaves, cut the stems, and pour hot water over them to soften them. This is important because then they roll more easily.

Step two: Prepare the stuffing

  • rinse the rice several times and soak rice in the water, and leave it in the water for about fifteen minutes.

  • lightly oil the pot, simmer the onion briefly, add the carrot and rice and also simmer briefly, then add the meat and cook until brown. Season the stuffing with salt, pepper, paprika, parsley basil.

Step three
Take one leaf, then put a spoonful of stuffing on its lower end. Since my leaves are narrow, I put two, as in the photo. Then carefully roll the leaves. Fold the stuffing with the leaf on the side, of course, so that it doesn't fall out.

Arrange the rolls next to each other in a lightly oiled pan. When you are done, pour water over them, but so that the water does not cover them completely. Put patience dock leaves over so they don't burn. Cover them with foil or a lid if your baking dish has a lid.

Put them in the oven at 180 to 200 degrees and bake for about 30 minutes. Then remove the lid or foil and bake for another 15 minutes.

This delicious dish is even tastier with sour milk. Yummy 😊

I adore this dish, and strangely my children also love it, having in mind that children are disgusted with mostly all green food😃 When Vuk was little, I lied to him that peas are green balls from space, which are adored by aliens.😀 But I didn't have to make up stories for these green rolls ... They just love them! as you can see in the photo😊

That’s it! We also call these rolls sarma. The Balkans sarma is an iconic dish and exists in many variants. The Greek specialty Dolmades – stuffed grape leaves, are certainly the most similar to this dish.
