Hello @konaqua , I have never prepared it with eggs, here in my country the eggplant is widely used in different dishes, even lasagna or pasticho are made. Actually the gastronomy of many countries is different. Greetings

What you did, if you cover it with eggs, is already another this called "tortang talong". Talong is eggplant in Filipino/Tagalog. Really tasty since the both complements even the texture. I never thought using the eggplant as the container or a bowl though. Might try that in our family reunion.
