Corn Dogs, Pumpkin Cookies, and a Hay Ride
We interrupt the usual "manifesting" content with a delightful dip into some cornbread batter, a bowl of chocolate chips, and a silo of corn.
My friends all know that Autumn is my FAVORITE time of year. I enjoy the change in seasons ever so much! With the beautiful leaves on the mountainside of this Utah Valley so suddenly sought after by the residents of coastal cities, and the cool, crisp weather that turns from blistering sun to drizzling fog in a matter of days it seems.
Favorite Fall Things
This week, I've made sure to check off the list of all of my favorite things Autumnal, including, and not limited to, baking my famous pumpkin chocolate chip cookies, visiting the local farms with the kids for hay rides, corn maizes, and pumpkin carving, and this year I've added to the list making home made corn dogs! And weren't they delicious!
I use only the best dogs - Hebrew National beef franks. And only the best cornbread batter - Krusteaz. It's delightfully corn-tasting with a hint of sweet.

My Secret Pumpkin Chocolate Chip Cookie Recipe Below:
DRY INGREDIENTS
- 2 C flour
- 1 C granulated sugar
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp ground allspice
- 1/2 tsp salt
WET INGREDIENTS
- 1 large egg
- 1/4 C vegetable oil
- 1/4 C applesauce
- 1 tsp vanilla
- 1 C pumpkin puree
Chocolate sweetness
- 1 1/2 C Ghirardelli's semi-sweet chocolate chips
Steps
- preheat oven to 350
- cover cookie sheets with parchment or silicone silpat
- mix together dry ingredients
- mix together wet ingredients
- combine and mix together until flour is completely incorporated
- fold in chocolate chips
- Leave large spoonfuls of the mixture on the cookie sheet
- Bake for 12 minutes

They ARE amazing. They are the most amazing thing in the universe. I've made three batches in the last 2 weeks--mostly shared with folks at work and the neighbors. But I'd be lying if I told you I didn't eat them for breakfast at least 2 - 3 times.
What? They're good for you! They have pumpkin! LOL
