I managed to get the most gorgeous Portobello Mushrooms and a beaut of a yellow Capsicum (aka Bell Pepper) so these were the main ingredients of my open-face sandwich.
A peek at a pretty curly lettuce growing in my herb garden outside the kitchen.
The Bread
This recipe was experimental as I changed my regular wholemeal Bread recipe by substituting one cup of flour with a cup of Almond Flour.
Wholemeal & Almond Bread
- 3 cups wholemeal flour
- 1 cup Almond Flour
- 1 tsp Salt
- 2 tsp brown Sugar or Honey
- 2 Tbsp melted Butter
- Approx 400ml lukewarm Water
Knead together, leave to rise in a warm place, knock down & place in sprayed bread pan, bake 45 min at 170°C.
The verdict - a perfect loaf of bread with a beautiful texture and a perfect crust plus it had a delicious slightly nutty taste.
The Topping
- Sauteed sliced Yellow Capsicum
- Sauteed sliced Portobello Mushrooms
- Top with fresh Thyme & chopped Spring Onions
- Top with finely grated Cheddar Cheese
- Pop under grill to melt the cheese & make Cheese Crisps with remaining cheese.
Absolutely scrumptious was the final verdict, not much conversation except 'yummmmm...this is gooood'...
