Good morning hive,
I hope everyone is doing well. Just wanted to share this delightful breakfast which I made.
We all know eggs are very famous at every table for breakfast and I today is preparing my version.
Since I went to the market the other day and bought some vegetables there were tomatoes left so I decided to make a simple egg omelette for breakfast
.
for the preparation I used
3 medium size eggs
2 medium tomatoes
1 small onion
spring onions
salt (I used 1tsp rock salt)
pepper(pinch)
seasoning (optional)
oil for frying
procedures
simply chopped the tomatoes, onion, spring onions into small pieces
combine the eggs, salt, pepper and seasoning beat until ready.
Lastly fry it.
the finished dish so simple but yet gives us a full stomach and certain energy to face this day and I just love that the kids love it too😉
We had it with rice and the papaya pickles which I usually made due to the availability of papayas here, and if you want to try to make one just see the post I posted in the same community

This egg and vegetable dish combination is one of my all-time favorites.
Yes, I loved them too! Especially with lots of tomatoes delicious and very quick to prepare.
The omelet looks delicious, but I love a sunny-side-up.
I used to make them too but today I decided to have omelette because of the left over tomatoes 🙂
