Pine cone jam and more

In this post, I will show you some photos of the food that I was treated to when I was on vacation.
In the first photo, pancakes with meat are smeared with sour cream and sprinkled with sesame seeds.

But what I especially wanted to show you is a photo of pine cone jam.
I tried it for the first time.
And I really liked it!

Well, of course, I took the recipe and I want to share it with you.
Collect small, soft pine cones 2.5 to 3 cm in size, as the larger ones will be hard.
Рine cone should be resinous and undamaged and only from branches.
It is better to collect cones with gloves, otherwise your hands will be in resin.

Rinse the Рine cone well with cool running water.
Then pour cold water and leave for 2-3 hours.
You need to soak the cones so that bitterness leaves them.
The Рine cone should swell.
Then rinse again.

Put the Рine cone in a saucepan.
It is advisable to use a stainless steel or aluminum pan to make it easier to wash it off the resin.
Then pour water to hide the bump by 1.5-2 cm, add sugar, stir.

You need to cook in 5 stages.
The first stage: when the water boils, boil the Рine cone over medium heat for 10 minutes.
Then turn off and leave to cool completely.

The second stage: bring to a boil, but do not boil, turn off and let cool.

Third step: boil for 10 minutes and let cool again.

Fourth and fifth stage: boil and leave for 30 minutes.

Sixth step: bring to a boil and let cool completely without a lid.

When the jam cools down a bit, add 1 tbsp. fresh lemon juice.

You will need:
Pine cones 500 gr.
Sugar 800 gr. (possibly less)
The water should cover the buds by 1.5-2 cm. Approximately 800 ml.
Lemon juice 1 tablespoon

I would never have thought it possible to eat pine cone jam but I suppose people find a way to eat whatever is around them

This jam surprised me too, but they told me that in the old days they cooked not only pine cones, but also spruce cones.
And this jam is very useful, but there are limitations.

Pine cone jam! We tried to cook it a decade ago... I cant say we had a super-duper success with the final result, hehe xD but... all in all, experience was nice. We collected young green pine cons at Ladoga skerries! Sweet memories...

But it can be repeated, especially since there are pleasant memories!
