RE: Sous Vide Salmon In Smoked Hickory Sea Salt

in Foodies Bee Hive3 years ago

Hi @gregory-f ,
Sure ..
Star with quinoa (i use mix quinoa), rinse and soak for an hour.
Then cook in medium heat with chicken broth/stock (ratio 1:1) along with pinch of salt until the quinoa absorbed all the chicken broth, remove from the heat and cover it.
To make salad add chopped parsley, salt, black pepper, bit of squeeze lemon juice, bit of grated parmesan cheese and any choice of vegetables.

To make creamy capers sauce.
In low heat, melt 2 tbsp unsalted butter and add 1,5 all purpose flour, stir until well blend.
Gradually, stir 1 cup of hot milk (microwave first) along with salt, black pepper, dash of dried thyme, bit of grated nutmeg, 2 tbsp of capers, a tbsp of grated parmesan cheese and a tbsp of heavy cream. Serve.

If you use fresh capers, cook it first in melting butter then add all purpose flour follow with other steps.

Thank you for stopping by.
Regards,
@lugina.

Thank you. It sounds pretty simple to make but looks so good in your picture.
