Always felt like beet is such a challenging ingredients to work and pair with but thank you for this idea :D and the only time I had beet are often only at restaurants but now I kinda want to know how to really cook and properly pair them

I think a roast beet salad works with fennel and orange - with a bit of feta. Fetta works well with beetroot as does citrus.. hope that helps. The bright sharpness lifts the earthiness.
Also, just stay earthy and do a beetroot risotto with fetta or Parmesan and parsley and roast garlic!!
