Rice: 3-4 cups
Chopped green beans: 3 cups
Minced meat: 300 to 500 grams
Onion: 1 piece
Tomato paste: 3 tablespoons
Turmeric: 1 ounce of jam
Cinnamon: 1 ounce jam
Curry powder: 1 tablespoon of jam
Saffron powder: 1 teaspoon
Black pepper: 1 teaspoon
Salt: As needed
Oil: as needed
Steps to prepare Lobya Polo(Persian Green Bean Rice ) :
First, finely chop or grate the onion and fry in oil until soft. Then add the minced meat and fry until the meat changes color.
After the meat changes color, add the chopped green beans.
(Beans must be boiled or roasted before being added to the ingredients)
Then add salt, turmeric, pepper and cinnamon, then add tomato paste and fry a little.
You can pour very little water into the pan and let all the ingredients go together and the tomato paste is cooked. (This is not necessary)
Prepare the rice at the same time as cooking the Lobya Polo ingredients.
To prepare rice, first start by crushing the rice and letting it soak in some water.
Then pour the soaked rice into the pot and adjust the water level of the rice so that it is about a fingertip higher than the amount of rice itself.
Put a teaspoon of salt and two tablespoons of oil in the rice and put it on high heat.
When the rice water is gone, Pour a layer of rice and a layer of ingredients on it until you run out of rice and ingredients.Then let the rice simmer.After about 30 minutes, your Lobya Polo is ready.
Before serving, pour the remaining amount of oil on the rice and serve in your desired dish;
Finally, when serving, sprinkle some cinnamon on it
