Carrot Cake Oatmeal Squares

Talk about next-level oatmeal. This wholesome bake is hearty and delicious. It’s a perfect breakfast bite or midday munch, and you can add any extras you have on hand, including chopped pecans, shredded coconut, raisins…even dark chocolate chips. When it comes to the milk, any variety works—almond milk, oat milk, cow’s milk, and so on.

Ingredients:

  • • 1 egg
  • • ½ cup unsweetened almond milk
  • • ⅓ cup maple syrup
  • • 1 teaspoon vanilla extract
  • • ½ cup grated carrot
  • • 1 cup rolled oats
  • • ¾ teaspoon cinnamon
  • • ½ teaspoon baking powder
  • • ¼ teaspoon salt
  • • Optional extras: chopped pecans, chopped almonds, shredded coconut, raisins

Preparation:

Preheat oven to 350°. Mist a small baking dish (about 7 x 5 inches) and set aside.

In a medium bowl, combine egg, milk, maple syrup, and vanilla extract. Whisk in grated carrots. In a separate bowl, combine rolled oats, cinnamon, baking powder, and salt.

Add the dry ingredients to the wet ingredients and mix to combine. Fold in optional extras if desired.

Place mixture in the prepared baking dish and bake for 35 to 40 minutes. Allow to cool before slicing and carefully remove with a spatula.
