Today I am sharing with you the recipe for my pernil in Christmas sauce that I prepared for New Year's Eve dinner, a typical dish in Venezuelan homes, which is present during Christmas and New Year's dinners, I call it in Christmas sauce because it is prepared with ingredients that we use for Christmas dishes.

Deshuesar el pernil, y puyarlo
Bone the pork leg and polish it.
We prepare the Christmas sauce, for it we liquefy the capers, olives, mustard, wine, raisins, garlic with the chicken broth, and pour it over the pork leg already puyado,salt to taste, pepper and paprika let it macerate overnight, since through the puyas will enter the sauce to the pork leg, to be well penetrate the liquid inside the holes made to the pork leg, and have a uniform flavor both inside and out.
It depends on the time we want the pork leg ready to eat, we calculate 5 hours before, since it takes time to cook well, of course it also depends on the size of the pork leg and the oven, it took me 4 hours to cook it at 200 ºC.
Lo picamos en longas y adornamos a nuestro gusto, para llevarlo a la mesa, yo tenia unas ramitas de oregano, y se las coloque de adorno, de esta forma le di un toque gourmet al plato del pernil.
I had some oregano sprigs, and I put them as a garnish, in this way I gave a gourmet touch to the pork leg dish.
