Having fun with sweet potatoes

Being inspired by the different colors of sweet potatoes, I came up with a recipe for today's dessert- potatoes jelly
Let me tell you how to make it:

  • Peel the sweet potatoes ( the Japanese and purple ones )and clean them with water added with salt

  • Steam the Japanese and purple potatoes until they are soft

  • Add agar powder into water and let mixture still in 10minutes
  • Grind the steamed sweet potatoes with milk and sugar in 2 different containers so that the two colors are not to be mixed

  • Boil the mixture of water and agar powder, then separate them into three, one of which is to be added with Japanese sweet potatoes (color), one with purple potatoes (purple), and one with coconut milk (white)
  • Sieve the mixture that contains sweet potatoes for a perfect texture ( I skipped this step because my husband wanted to taste little sweet potatoes pieces inside the jelly :)))
  • Apply the mixture on the mold in color order ( wait for the first layer to dry before applying the next one)

  • Put the jelly in the fridge for around 1 hour before having

The whole process does not take much time and there is not a high demand for the ingredients, so I believe all of you will be successful on the first trial. Good luck!

Are they not Taro- https://en.wikipedia.org/wiki/Taro which I love the yellow one, but not so much the purple...I used to live in the DAintree RAinforest in Far North Queensland and we used to grow Taro. My ex was from the Cook Islands and he taught me how to cook the white (yellow) Taro as mashed potoatoes or as sweet dessert like Banana coconut pudding using Arrowroot too. Oh so delicious...
