Eggplant and Paprika Antipasto

Hello everyone, after a rainy afternoon and a nice hot chocolate, I want to share with you this delicious recipe for eggplant vinaigrette my style. I made it today with 3 eggplants that I had in the fridge, and before they went bad I decided to make them for a delicious snack with soda crackers.

For this recipe I used

3 medium eggplants
1 red bell pepper
Salt to taste
A sprig of cilantro (you can use oregano)
3 tablespoons of vinegar
3 tablespoons of oil (preferably olive oil)
4 cloves of garlic.



I peeled the eggplants and chopped them into strips, then I submerged them in salted water and let them rest for about 10 minutes, this in order to remove the bitter part of the eggplant. Once the minutes had elapsed, I washed them and squeezed them.



Separately, I chopped the paprika into strips, crushed the garlic and chopped the cilantro sprig. I reserved all these ingredients.


Apart in a frying pan I sprinkled it with oil and I placed to roast to low fire the strips of eggplants, turning them from time to time, I removed them from the pan when they were soft, I did that process until I finished roasting all the eggplants. Then in the same frying pan I sprinkled again with oil and placed to roast the strips of paprika.



Once the bell pepper and eggplant strips were roasted, I began to season with salt to taste, added the crushed garlic, cilantro, salt, oil and vinegar. Mix very well, adjust the salt and then I canned.

This recipe is very quick to make, the eggplants roast very easily. I have made them with oregano, but once at a friend's house I tried them seasoned with coriander and I think they are tastier.

This recipe can be kept for many days in the refrigerator, as long as it is kept in a glass jar, which must be properly sterilized (I didn't have one, that's why I pack them in plastic).

Then enjoy, preferably with crackers or bread.

Antipasto de Berenjena y Pimentón

Hola a todos, después de una tarde lluvia y un rico chocolate caliente, quiero compartir con ustedes esta rica receta de berenjenas a la vinagreta a mi estilo. La hice hoy con 3 berenjenas que tenía en la nevera, y antes de que se fueran a dañar decidí hacerlas para una rica merienda con galletas de soda.

Para esta receta usé

3 berenjenas medianas
1 pimentón rojo
Sal al gusto
Una rama de cilantro (puede usar orégano)
3 cucharadas de Vinagre
3 cucharadas de Aceite (preferiblemente de oliva)
4 dientes de ajo.


Pelé las berenjenas y las piqué en tiritas, luego las sumergí en agua con sal y las deje reposar durante unos 10 minutos, esto con el fin de retirar la parte amarga de la berenjena. Una vez transcurridos los minutos, las lave y las exprimí.

Aparte pique el pimentón en tiritas, pise el ajo bien triturado, y pique la ramita de cilantro. Reservé todos estos ingredientes.


Aparte en un sartén lo rocié con aceite y coloqué a asar a fuego bajo las tiritas de berenjenas, dándoles vuelta de vez en cuando, las retire del sartén cuando se tocaban blandas, hice ese proceso hasta que terminé de asar todas las berenjenas. Luego en el mismo sartén volví a rociar con aceite y coloqué a asar las tiras de pimentón.

Una vez asados las tiras de pimentón y berenjena comencé a sazonar con sal al gusto, le agregué el ajo pisado, el cilantro, la sal, el aceite y el vinagre. Mezcle muy bien, rectifique de sal y luego envasé.



Esta receta es muy rápida de hacer, las berenjenas se asan muy fácilmente. Yo las he hecho con orégano, pero en una oportunidad probé en casa de una amiga las aderezadas con cilantro y a mi parecer pienso que son más sabrosas.



Esta receta se conserva por muchos días en la nevera, siempre que esté resguardada en un frasco de vidrio, el cual debe estar debidamente esterilizado (yo no tenía, por eso las envase en plástico).


Luego a disfrutar preferiblemente con galletas o pan.
